Happy National Chocolate Souffle Day! (2/28)

No, not happy pancake day!  I refuse to even capitalize it.  Sure three out of four news reports this morning mentioned it, and one local news station was even cooking pancakes on the set.  Ok, it’s fine that International House of Pancakes is giving away free pancakes today in acknowledgment of the day, and a big fat whatever that I even made my daughter pancakes today because I was afraid she would be the only one in school that didn’t have them for breakfast.  My list says it’s National Chocolate Souflee Day, so it is!

With all that out of the way, I don’t think it can be disputed how random and fraudulent this list, to which I have committed to eating, is. There is a small consolation to this sub-holiday for me, however, and it is that every news outlet that is citing today as National Pancake Day, from NBC to the Huffington Post, has absolutely no real source beyond IHOP’s free pancake offer.  That makes me feel a little better about being so severely suckered by all the ones on my list.

Au Peche Mignon says, "No Souffle for You! Come back.. TWO DAYS!"

If it sounds at all like I’m conjuring some form of excuse here, well, that’s because I am.  See, what happened was, I only have two French restaurants in town, and only one of them, La Provence, had a souffle and it was a Grand Marnier souffle.  There is also a French chocolatiere and pastry place, but they’re closed till Thursday.  I wouldn’t make something like that up.  I felt like Cousin Vinny,

“Are ya gettin’ this??  The whole store has the flu!”

Now, you know that I’m not afraid to make a souffle, even with a seven year old, two dogs and two cats thundering around the place.  The only problem was that I had Jimmy Buffett tickets for tonight, and had to get there to do the proper amount of celebrating before the show.  So, I’m sorry to say that I have to offer a rain check till tomorrow.  Technically I get tomorrow as a bonus anyway, because it’s the 29th of February.  I hate to pull the Leap Year card, but I have to.  Follow up to come.  I won’t get hung out to dry like this again, though, and hey, at least I made the pancakes… (2/28)

…ok, so here’s the souffle. Perfectly executed?  No. Pretty? Nuh-uh! Severely light, fluffy and delicious?  Sort of.  I think it fell a bit in the middle and I had to cook it twice as long as the recipe called for, but, my wife really liked it, so I am a dynamic superhero! (2/29)
